You never get the chance to block, because the determination that a kill-move occurs happens before your defenses are taken into account. As a result, all it compares against is your total HP, so if the attack's damage exceeds that number, you're toast. Since it has already determined that you got one-shotted, it locks out your controls and plays the appropriate animation sequence, so you are unable to react in any way.
