What jobs are there, or aren't there any technically?
In riverwood the women says go to hod for work and when I do he just mutters a line an that's it like a minor character would.
It let's me use the wood saw thing though, although I don't get paid for it or anything

I've only seen chopping wood as a job.

My "jobs" are killing dragons, hitting people with swords and stealing as much stuff as possible (my hero tax), they dont "pay" but have their own rewards.

you can get paid for being a farmhand.

It seems they cut a lot of that kind of stuff out though.

Chopping wood isn't really a job though, it's just cutting wood to then sell
