I get the exact same thing. I've already spent a... stupid amount of time on a character, got him to level 44, then said "[censored] it, I'm starting over." I've had to overcome this... restartitis with other games like Dragon Age and Fallout. You just gotta slow down, and think. Think of your character as yourself immersed in the world (i.e. not playing as a previously conceived character you couldn't really see yourself as).
For example, my first character was a paladin type. Hammer weilding, plate donning, and totally badass, but not really "me". He was built perfectly for 2h melee combat, but after like... 50 hours of play, I wasn't having fun anymore, and I was just rushing through the quests. If you think fireballs and sorcery is wicked sweet, but doesn't really reflect who you are, maybe you should rethink your path through the game.
My new character is a hunter/swordsman, which is something I could see myself as in this world. It's odd, but this time I've already found myself taking in much more of the landscape and environment, and I've picked up on a lot of things I've missed on my first playthrough. So, take some time, do some patient theory crafting while looking at the perk trees, and play through the game nice and easy, as you would if you, yourself, were actually in Skyrim. There's no rush.
