Lumber is actually full logs you purchase (or cut yourself) at lumber mills.

A few other new items are:
-Goat horns (for making wall sconces and chandeliers)
-Straw (for beds, arrow targets, and beehives)
-Locks, iron fittings, hinges, and nails (all for building)

As well as a ton of new food, apple dumplings and mudcrab legs to name a few.

Exactly.

Lumber = Sawn Logs = Turn into House.

Firewood = Arrows.

I got those mixed when I first downloaded it yesterday. Really wish I had those 3 hours back that I spent chopping wood at the block in Whiterun... lol

But I have a metric butt-load of arrows now.

Could someone tell me which category these items appear in at the forge/crafting station? Like IRON, STEEL, WOOD, IMPERIAL? Is there a new category?

At the Dawnstar spot of land where exactly is the quarry stone deposits? I found 2 clay deposits to the left of the logs and 1 in front of the workbench but no quarry stone.

Another new cooking ingredient is the mudcrab legs

You can obtain one butter from the butter churn each time the house resets, you normally just buy your butter and milk from any merchant that sells food.

If you have the kitchen wing, and a cow, you can get a jug of milk each day in one of the kitchen cupboards, it only holds 7 jugs though, so you have to move them if you want more free milk.

The only place you can get a hawk's egg is apparently on the roof of your new house, and the nest can respawn with a different type of egg in it.

The forgable house building items appear in their own section - Building Materials

Heljarchen Hall? There is one just the other side of the outside workbench where you build the house.

Where do you cut logs? I know, I know . . . a sawmill, but when I went to Falkreath and asked to cut logs myself, the owner refused, saying he would lose the money.

Some will let you, you just have to try different mills. I never tried, I usually bought mine.

You have to be friends with the sawmill owner, did you make friends with the Riverwood mill owner? Does not matter what mill you go to, they all deliver. Just chopping some wood and selling it to them seems to make most happy. Cutting for own logs is very time consuming though, I just prefered to buy them even though I could have got them for free.
