Because I enjoy a social environment. Because I enjoy PvE content with other people. Because I enjoy raiding. Because I want to try AvAvA PvP. Because I like Elves. Because I like TES lore. Because I like MMO's. Because I'm pretty damn sick of these WoW clones out there and want to play a good game.
There's a lot of reasons to play ESO, RPing isn't the only one.
I've never understood in game marriages. It seems very silly to me. Maybe that's because i'm married IRL idk. Anyway, I have no problem with them including stuff like this in the game for those who find it immersive. I personally have no argument against adding more features to a game even if I don't ever plan on participating fully. Just as long as they don't add childish things turning this game into wow or eqn. Keep the game gritty and I got no problem!

Well there are other MMOs then MMORPGS like Planetside2 for those that don't like roll playing... The Elderscroll community is a quite strong RP community so you ether have to get used to it or be hated by all RP'ers when you destry there game play.
