Olfina isn't one of the NPCs available for marriage.

If Muiri is unkillable (forget if she is or not) try using http://skyrim.nexusmods.com/downloads/file.php?id=4139 You could also use that to set Olfina (or anyone else) up.

I think she's a just normal NPC in Whiterun.

They're just batch files used to fire off a few console commands at once.

Example: Spouse.txt looks like this

SetRelationShipRank Player 4
AddToFaction 0005A1A4 4
AddToFaction 00019809 4

Instead of typing all the commands out you just have to remember 'bat spouse'
Much easier on the old noggin.
