It's been a long time since I played Skyrim (well...6 months ) and there seems to be huge ammount of great mods out there. So far I'm planning to add these:

Immersive HUD - iHUD by Gopher
SkyUI by SkyUI Team
A Quality World Map - With Roads by IcePenguin

For me Skyrim felt allways a bit too static because there weren't that many travellers on the roads and allways the same people visiting the Inns. I would like to have mod, that adds more people travelling between towns and visiting shops and inns, mods that add more life to Skyrim without being too over the top. So far I have found few that sound good, and I would like to hear your oppinions as I'm a bit scared to install mods that could cause save game bloating or other problems.
