So much to do that its actually off-putting a little?

This may sound strange, but ive always had a problem with too much choice. It becomes overwhelming.

There are so many quests, so much to do that after an hour i end up saving, doing something else for a while thinking "Hmm, ill go play it soon" then sort of putting off playing it. Its like.. i want to do it all, but i know it'll take a huge amount of time so i put off playing, maybe?

When i play i enjoy it alot and i have no complaints, its just a weird personality defect i think.
Any ideas why this happens?

I felt that at times, not always, mostly with the miscellaneous section of the quest log

Everyone loved Elder Scrolls back in the day because it dropped you into a world with so much to do, you didn't know where to start. In my opinion, its the point of the series.

Focus on one quest line to the end,

SO why not do the main quest then the sides? Or .. do one area and then move onto the next.

Just focus on one thing at a time. For example just work on the main quest without doing any side quests. That's pretty much what I'm doing. After I beat the main quest, I'm going to join a guild. After that I'm going to try and explore all of the dungeons, while doing side quests. etc. Just give yourself something to do and stick to it.

Yeah, same. I have no idea what to do, because I want to do it all! So I started with the main quest yesterday and just played.

You could try making a more restricted character. For example, instead of making a character who does everything, roleplay a mage and only do the Mages guild, Main quest and side quests related to magic.
