Been checking out the games, look awesome! T'was wondering however, would I be missing out on the story of Skyrim if I haven't checked out morrowind or oblivion!?

Look at this as visiting another country. You aren't familiar with its history but that doesn't mean you can't get around or enjoy it. What happened in previous games is part of history in this game, you might read about some historical characters and never know those were the main character from previous games.

Go to uesp.net and start reading about Elder Scrolls Lore. Start at the races. You have about 6 days (OMG I can't believe how exciting that is to say that) until Skyrim comes out so just start reading.
