I'm partial to blue mage robes - the ones with the hood, like the Court Wizards wear. One of my characters chose to wear them on her everyday travels, and only wore something different when she was at home or attending a formal occasion.

In terms of clothes as opposed to robes ... I'd say the belted tunic, at least for men. I think it'd offer the most movement when you're in a fight.

Or the Dunmer outfits from Solstheim if you have Dragonborn.

I think the skaal clothing is classified as light armor.
