May sound silly, but I'd go with the 3d zoom inspect. I could lose hours with that :)

I like the eyeball while sneaking and the way you can hit someone and hide while they look around for you. Also when they find a body and are all like "i'll find who did this to you" right before receiving a arrow via first class air mail.

Crafting definitely (all of smithing, alchemy, and enchanting), it's a lot of fun and I feel quite proud whenever I make a new item or find out another effect of an ingredient, the latter is much better this way than just learning them automatically at higher skill levels like in previous games. :)

Is that where you can view each item and rotate it and such?

the increased difficulty

This.

Bows as a viable main weapon choice.

Or this!

Too many new features to choose from. Possibly crafting? It's nice to finally be able to do stuff with the furs and meat I find.

Dungeon design and in particular the way you can exploit the terrain and also use traps against the enemies in such good ways.

When caught in sneak you can run a little back, hide in some shadows and they'll eventually lose you. Unlike Oblivion in which once you're caught you're stuck in a fight to the death and they could find you no matter where you ran to hide.
One of the many things on my wishlist that were put in. Just to name a few more, sneaking in 3rd person feels way better, bows are stronger, 15x dagger sneak attacks, level system better than I thought imo.

I love the new alchemy. It just seems so much more realistic than it did before.

Being able to upgrade weapons and armor is pretty cool.

The fact that other conversations go on while you are talking to someone is awesome.

And the dungeons are soooooo much better than Oblivions. At least the few I have had the chance to go into.

Forgot to add that I love how merchants have limited money like in Fallout. I think it solves the Oblivion problem of getting rich too easily and makes you think about how you should buy and sell.

I'm not saying I love this more than everything else. I like many things they've done. I will say, however, the ability to dash is surprisingly awesome as a stealthy mage. I get to burn my magicka down then run like mad and hide to recover a bit more, FUS RO DA when they find me and dump some magicka, and take off again. It's like hide and seek. :)

This is ironic because I originally rolled my eyes at the dash thing and assumed it would be useless as a mage. I also declared I hate how there's a bobbing camera and breathings sounds, and in practice I like both of those as well.

I like a lot of it. I like the lockpicking system, I like being able to hover over an empty crate and see that it's empty before I bother to rummage around in it, and I like how utterly reptillian the Argonians look.

The difficulty of magical users.. Sounds so realistic.. One time I was running away from some magical guy and soon as I thought I lost him.. A huge firebolt lunged past my face.. Was amazing

Getting whacked by a troll's club and flying 100 ft into the air. That and the new combat and magic system.

That I didn't need Lockpick 100 to crack a Master level lock.
