Whenever I select Dragonborn in the Data Files load list, the CK will crash near the end of loading data files. Is there a way to prevent this? Running Windows 7 Ultimate Sp1 on the machine I'm trying to do this in.

You need to add the dragonborn.bsa to the archive list in the editor ini file in your skyrim folder
