I would probably spend my life studying magic rather than banging on a keyboard all day.

Probably dead. Wolves I can handle, (but this talk of dragons) but most of Tamriel's inhabitants would kill me.

I would start a brewery, I find tamriel has a distinct lack of scotch. I would also have a team of khajjits I would call the THUNDERCATS!

A noble and proud William Wallace type who wanders the harsh lands defending the weak and fighting the unknowable evil that stalks the land: and by that, I mean sitting at home reading The Lusty Argonian Maid because I'm too lazy to save the world.

Edit: and if I could be bothered, trying to find out where I dropped the first volume of the Argonian Account during one of my many mid-travel unloads.

I would become a mighty sorcerer, live in a tower, form an army of men, magical constructs, and daedra, and then take over a nice swath of land in Morrowind. Maybe from the Argonians.

Except in Tamriel I can bake pies using a fire spell then cool them using a frost spell. Charge the lost travelers a few gold for pie and offer the good looking male npc's a bit of ale and a soft pillow to lie their weary head. ;)

That depends on how many here who can handle dragons. But yeah, preferably studying magic and a nighttime nightingale/vampire hunter, fighting to keep the streets of Tamriel clean.
