Yea I saw this several times in red dead, I actually bought the digital copy right from XBL. Usually i go back to xbl and clear cache then reboot seems to resolve the issue. I have noticed this issue once in skyrim out of 50+ hours playing the game. I originally installed my copy and at some random point I walked into whiterun and the ground magically disapeared lol...walked in and out of the area and the problem was gone. Anyway read on some message boards not to install so I deleted my local copy until the next patch, cleared the cache, reboot and havent seen the problem since.
Also I seem to notice 90% of the weird stuff (ie levitating mammoths, draw lower res textures) seem to be more prominent over the plains in white run hold...not sure why but that's where I see the most issues.
Honestly I think the Xbox 360 is starting to see its years technically...devs such as bethesda, infinityward are really starting to hit the maximum peak this hardware can handle. The intensive graphics applications are only going to get MORE intensive by moores law. It's time for upgraded hardware.
