Odd, I've put in way too many hours (80+ according to steam already, wth...) and while I've had a bunch of minor bugs, there has been nothing even close to gamebreaking for me thus far - which is a big difference from my experience with early Oblivion/Fallout3/New Vegas.
Same. 67+ hours, and only minor bugs (and the horrible UI). Playing on 64-bit Windows.

about 50 hours in it on xbox. and i seems 1 default 'dragon' refuses to give his soul to me when i killed it(happend about 4 times), further i had a flying mammoth which died on impact:P, and some hireling which died in a dungeon, and 2 days(realtime) later i stumbled on his corpse moving half true the ground in a awfully twisted form, but that was funny really:P. and when loading i had 2 freezes, thats about it. nothing really bad. only the dragon is a pity, i do absorb the souls of frost and blood dragons so thats not really a problem.

I know one guy irl whos playing on PS3 and says that it has lots of bugs, Im playing on PC and i have found 2 bugs, i cant see my face when im wearing a mask and robe and giants shoot me in to space. It depends on platform.
The giants aren't a bug.

Besides random crashes to the desktop I have yet to find any bug that is game breaking. Oh well i do encounter graphical anomolies every now and then.

never played dark souls? well don't, because it'll never get patched :D A guy beat the game in 35 minutes in much the same way a guy beat oblivion with floating paint brushes.. He jumped down a cliff, quit the game, restarted and spawned in the boss room.

I'd definitely recommend everyone to buy Skyrim, NOW! :)

Well this way you make the game unplayable if done too early, because you'll be stuck at the boss forever at the level you arrived there and might never be able to kill it, if you brought the wrong gear.

67 hours on Xbox and i`ve only seen a couple of minor bugs. Certainly nothing game-breaking.
New Vegas was a hell of a lot buggier for me.

On XB360 and only it only froze one time after 10 orso hours, but that was more than likely my XB360 due to forgetting to open the slide door in the cabinet it's in (eeeeep hot!). Apart from a few clipping flaws I really haven't experienced any noticeable bugs.

And yeh well, I got high res graphs via flash drive, so there!

the only bug I've encountered:

after the Forsword Conspiracy quest, all the guards of Markarth approach me, and act as if I haven't completed the quest. They give me the "I've been framed" dialogue, and no matter what option I choose it's an infinite loop. Can't even go to Markarth now.

almost a game breaker for me, looks like I'll just avoid that city or something

I'm maybe 20 hours in and I've already found a huge glitch that's preventing me from joining the Thieves Guild.

After the event at the Riften market, Bryljof (sp) doesn't move to the tavern. The problem is the market event doesn't end, and even in the middle of the night they are all there standing around Bryljof. Which not only breaks the Thieves Guild quest, but also renders the rest of the vendors unusable.
