The main point with Skyrim, unlike older TES games where chosing a faction limited you from joining the opposing faction too (like Morrowind Templ vs Imperial Cult) you HAVE to roleplay if you want a good replay value. If you do everything with one character the certainly it will feel repetitive. On my main char I hve done the Civil War because it is something that fits my view of that particular character, but on another character I have already planned out I will certainly only be doing side quests andthe main quests. In case you are interested he is Paladin type who feels that gobernments and politics are mindless bickering, for all rulers are selfish and corrupt, while saving the world and doing good deeds are the true goals. He wont do any daedric quests, only uses healing magicks, does not use alchemy, enchantments or potions. He never uses ranged attacks, sneaking or other magicks but restoration, everything else is unpure and healing magicks come from holy Talos...
