First off, loving the game so far and only just got out of the opening sequence before crashing last night because I had to work today.

The only thing that is noticeable to me that is graphically odd (I won't even say disappointing at this point) is the fluttery and blocky shadows. I'm playing on PS3 - does anyone know if there are PS3 settings that I can change to help this or do I just need to get used to it? Either way, it's no big deal, just curious.

No, it's a common issue to both consoles. Has to do with the game engine optimization.
