At the moment I'm using a sword/dagger combo for my stealth character but I only get kill cams when I use my sword so...Is it possible to get stealth kill cams using a dagger in your off-hand?

Use a dagger in your main hand for your stealth kills.

I don't like to dual wield a dagger and a sword. Sword and sword or daggerr and dagger gives better animations.
