So what spices do you always include in your dishes when you are cooking? Beyond the standard Salt and Pepper i'll almost always use Garlic, chili, and onion powder for standard dishes with a bit of ground cloves for pork dishes.

Garlic & jalapenos + my homemade teriyaki sauce is all I ever really need.
I like crushed red pepper too, but hubby doesn't like it that much so I don't use it.

Certain pork or tomato based dishes I'll use the typical oregano & other such spices, along with a lot of garlic/jalapenos (no teriyaki sauce tho, haha).
It's not a specific spice, but I like marinating pork overnight in Italian dressing (like Bernstein's), or even using a couple tablespoons of it to stir-fry pork/vegies with vs. plain old olive or vegetable oil.

I've been on a real rosemary kick lately. I have been putting it on everything: potatoes, chicken, pork ....

Garlic. Garlic goes with just about anything...

I notice a trend here.

I'll have to say garlic as some of you already mentioned. Garlic is awesome. I love lots of different spices though but I don't include them in every dish.

I'm not always using it, but wasabi is my new best friend in the kitchen. It gives pork, fish and chicken an 'eastern touch' wich I like.
:liplick:
And garlic of course.

Depends what I'm cooking. English mustard and Marmite are favourites with meaty things; in terms of herbs, rosemary, thyme, sage etc, but fresh is always much better and they're so easy to grow, so grow your own! The plants in question are quite pretty, too.

For chili, I use fajita and taco seasoning.
