So sometimes when wondering around Skyrim you come across random dead people, (ie dead hunters, that one guy dead in his shack etc) I was wondering where all the places you find them are and how much of a back story they each have.

there's almost always a note or journal or book close by that describes what happened. don't know how many there are as they are....like you said...random.

Sometimes a fight happened nearby, like a sabre cat and some poor fool. Also, I've seen Thalmor and Stormcloaks, or Imperials and Stormcloaks, randomly find and fight each other. Sometimes I don't see the fight, but I was close enough to spawn it.

I've seen that too, worst was when I found a dead couple next to each other, and the womans journal read something like "I'd rather brave the journey with him and have us die together than to lose him forever" or something like that. And some complete cockflap had allready looted them.
