How honorable should I be? I would say the samurai took honor very seriously in general, although there were always exceptions, due to human nature and evil. If you want to be a "typical" samurai, then an honorable attitude is what you need. Ponder the morality within any given situation, and side yourself with good, not evil. It's very similar to how people play paladin and knight characters.
If I find a chest - should I leave it ? Yes, and no. In my opinion, if the chest belongs to somebody you know is alive, and is not a law-breaker, then certainly not. If the chest is in the wilderness or in a cave/camp/fort controlled by outlaws, then I believe it's fair to take it at that point.
Picking locks- Picking locks as a means to an end in going through an area you know is controlled by bandits or other wrong-doers, is fine. Breaking into somebody's property, unless absolutely necessary for the main quest, isn't.
Poisons- I think poisons are more reminiscent of the ninja than samurai.
Taking from the dead(main question) - As in, If I kill someone that has started a battle with me..Could I take what he has? Or is it dishonorable to take from the dead? It's a grey area here, but if you if must, then take what you need. I personally think it must be disrespectful to unclothe every person's corpse in an area, because you're "looting" their armor. Weapons and other items seems OK.
Another thing, either two-handed or one-handed is fine for a samurai in Skyrim, but keep in mind that there is only one known two-handed katana in the game. I believe it's the Ebony Blade, and the rest are all one-handed Blades swords.
I play my character similarly to that of a samurai, holding morals and believing that the good of the many outweighs the need of the few or self. However, I'm more of a rogue than strictly adhering to what is honorable. I will do whatever it takes to accomplish what I believe the greater good is for Skyrim.
