When I enchant an item does it matter what size soul gen I use? In the enchanter interface none of the stats change when picking different sized gems....

When you select the enchantment the stats it shows assume that you'll be using the largest soul gem available. If you select a soul gem and then de-select and re-select the enchantment it should update the stats.

It depends on the size of the soul. If you have a grand gem with a petty soul it'll be the same as a petty gem with a petty soul.

Yes it does. However, depending on what you're enchanting and your skill level, it may not be noticeable yet
