If I have a mixture of sizes of soulgems in my inventory and i kill say a crab...does the game code fill the smallest sized gem it can or is there a chance one of the grand gems will get filled with the soul?

Also if I have say armour enchanted with a grand soulgem and it runs out of charges do i need another grand soulgem to recharge the armour or will a small one do?

Armor doesn't run out of charge, first of all. Soul gems in previous games fill from the smallest to the highest. And as for recharging, each sized soul has a certain amount it recharges. For example petty might be 150, lesser might be 300, common 450, etc.
