Is there a recommended method of uninstalling skyrim, I have copied the data folder to another drive so i do not have to download the hd textures again up on re-installation (from disk)

If you want to reinstall it later copy the whole skyrim folder or use steam backup. Remember to copy your save games in docs/my games/skyrim/saves.

But to uninstall just hit properties in steam and select delete local files.
