Walking everywhere

Does walking have any benefits over fast travel? I like to avoid fast travel as I found in Oblivion I was just zipping about, and walking in Oblivion would increase athleticism.
Does sleeping have any benefits over just waiting ?
Does eating have any benefits over just using heal or potions?

None at all. They removed Athletics and Acrobatics.....thankfully.

Sleeping does have benefits however. You get "Well rested" bonuses I believe. I never sleep so I don't know for sure.

-don't think so, beds were used to level in oblivion, but now you do it in the menu
-no, you can cook food to make it more potent or make potions like you said

i havent checked myself, but sleeping is supposed to give you a "fully rested" bonus, so you increase your skills faster.
no advantage with walking other than the fun trip you might get, and of course the random fights you'll encounter will help increase your skills

Walking has no benefit besides the awesome scenery.

Sleeping however does give you a few buffs, and sleeping with a spouse gives you even better buffs.

As far as eating goes, I don't think it does anything for you.

Walking: you take in the sights and sounds of Skyrim, enriching your life.

Sleeping: you are fully rested to be present and enjoy those sights and sounds.

Eating: your full belly allows you to appreciate the riches of this world, and to enable you continue exploring with more energy.

But yea...

Walking lets you find more undiscovered areas, sleeping gives you an xp bonus for 7 hours, eating serves no major purpose unless you're eating ingredients. The first effect listed takes place.

Yes. You get the "Well Rested" temporary Perk under 'Active Effects'
(I think it's 20% more experience points for as long as the perk lasts.)

I was at the Greybeard Monastery and it was kind of late to walk back down but couldn't find a free bed, so I sat and waited till early morning. I'm walking back just to keep with the feel of my game. The Province starts to feel very small if I fast travel like I did in Oblivion so far I haven't used it.

I notice that at the monastery monks kneeling and on the way up there's a woman was sitting cross legged meditating, would be good if you could do that with your character, I remember an Ultima game on SNES you could meditate cross legged to re-coup, the same Ultima also had balloon travel, you could un-pack it and float above everything and not get attacked.

Plus, if you walk everywhere in Skyrim, you can justify to your friends and family why you haven't seen them in 3 months. Just point to the completely explored map screen and say "This is the reason I missed gran's funeral, I had to find Alftrand."

There are NO benefits in walking other than enjoying the experience of traveling, picking up ingredients, random encounters, and leveling up you sneak skills and magic skills..... Personally I walk everywhere and I never fast travel.

Food & potion is underrated in this game because I think cooking is not something can be leveled up and people will just immediately totally disregard it. All healing magic takes casting time, while eating with pause the moment and you can chow down anything at your leisure until you are back to full health/stemina. If you've had the experience of being ambushed by 6+ bandits and archers, you will know how food & potion is critical in his game.
