I just use what suits my character, I don't use what I personally prefer for all of my characters, it just keeps things feeling fresh using what suits your character.
I like the bow, that's about it. The mod ones look way better, just more creative and interesting. As for as using them in-game, I prefer daedric. One or two points of damage do not make it worth the extra weight.

i do this aswell. sometimes i will even forgo the best gear because it doesnt suit my character. for example my nord never uses anything elven cuz [censored] the elves thats why

Speaking as my Bosmer who loves the Elven gear, I dont see a smithing perk for Nordic. Because [censored] the Nords, that's why.

I always forgo the best gear unless it suits the character. It's better to use what your character would use and be your character is it keeps things interesting and creates greater roleplaying value by giving your character a preference to what they would use.
I agree, Daedric looks cool at first, but later on it's just a bit weird to me. The only reason I use Daedric Bow is because of the range it offers compared to other bows, but I'm definitely switching to Dragon when it comes out.
They're a bit stronger than Deadric and with the enchantments I use I pity the fool that gets in my way.
And if they were all bone they'd look like the Foresworn weapons, so nothing wrong with the ebony to me. I like 'em.
I have to admit when I first saw them I was underwelmed, but I have a vivid imagination and I changed my tune when I realized I was amped to make a mace and sword to replace my Deadric ones even though the dragonbone were only a few points stronger. Give 'em a try there's no way you don't have enough dragon bones.
