My current character is sort of an anti-dragonborn. He is dragonborn, at least according to the Nords and has been called by the Greybeards, but is angry that the 'powers that be' are attempting to impose a destiny on him and, determined to create his own fate, he hasn't answered the summons and is refusing to cooperate. (Wasn't interested in doing the main quest this time, but I still wanted dragons)

He is hardy and married to his wife Elsha Nashida whom has bore him two children. Aserun is an imperial legion general using his status as a general to find his brother Rashir to steal what he feels is rightfully his. Aserun is a bitter self absorbed man, whom realizes his own mortality as he grows older he becomes more bitter and frustrated and has taken on drinking to fill his emotional void.

Try the "You are not the dragonborn" mod - very constructively nirfs the MQ but still gives you dragons.

Two of my three chars are not Dragonborn, one is a breton hunter who's in the companions and sleeps in tents most of the time, Archery, 1H, Light armor and Magic are his professions, his name is Randveir (I think, I haven't played him recently) and my other Dark Elf assassin, Stormwick, all he wants is money and some blood spilt, he is not with any factions, he resents them both and think they're stupid little feud should end soon because it is interupting his work. He's skilled in Light Armor, 1H, and sneaking.
