My favourite is Cosnach. The things he says after marrying him always makes me laugh.
Most of my characters married females but for a while I have allowed my characters to pick instead of me picking.

Marcurio. He's funny as hell. Too bad marrying NPCs tends to change their unique dialogue. :c
I love Mjoll's voice, I never get tired of listening to her. But for marriage, Lydia was my one and only.
But then again, I never discovered every NPC, so maybe there's someone else out there. Sylgia was quite nice, I recall.

Any of the Orcs-seriously, marry one and you'll see what I mean.
Hall of Shame (vanilla)
Mjoll the Annoyingess-worst of the worst, don't ever, ever marry her. Annoying voice actor, annoying dialogue, brings along a freak of nature to live with you and if you live in Solitude you won't get lover's comfort.
Camilla because she's a Cyrod, she has the same dialogue issues as Muiri and she cheats on you with a BOSMER, sadly all the poor sods who rushed into marriage probably picked her.
Muiri because of her awful dialogue.
Sorex Vinius because he's an ***hole and has rather rude marriage dialogue.
I'm actually glad some of the best looking wives in the game have some of the worst problems because it trolls all the male players playing the vanilla game that married women because their pixels were 'hot'. Camilla and Muiri with their dialogue issues, Camilla with her Bosmer 'friend', the 'pure Nord woman' Ysolda and her tree sap, Mjoll the Lioness and her host of problems and the hot girl from Shor's Stone and the miner's clothes issue.

Even though his accent changes just a little bit he's still the same person as when you marry him. He's such a sweetheart.
Temba wide arms. She's tough and surly on the outside, soft and vulnerable on the inside. You just want to warm her heart.

I've only gotten married on one account that I deleted a year ago but it was to Ysolda..I liked her because I could sell stuff to her. XD
I like a different spouse for different characters.
My Nord hired a handsome young Imperial mage in Riften as a bodyguard. Long travels from hold to hold together... nothing to do while riding the wagons... you know how it goes.
My Dunmer took smithing lessons from Balimund in Riften. After awhile, she noticed the way the sweat glistened on his rock hard body as he was hammering something. He noticed the same thing. And sparks of a very different sort flew between them.
And finally, my Imperial had long admired his fellow warrior and protector of Riften, Mjoll the Lioness. But he thought she had something going with Aerin. As it happened, Aerin had no interest in Mjoll (he did find Tiberius kind of cute though).
If any other characters of mine marry, their spouse will make sense for them. Someone compatible, reasonably attractive, and opposite in gender.
