I mean ancient vikings was one of shortest people in ancient Europe their height was about 150-160cm,and in ancient northern regions people always shorthen then others because cold weather and bad terrain doesnt give alot food for growing taller.
The world is full of warm places with short populations, the two have no correlation; warm climate does not ensure abundance of food and cold climate does not prevent it. Furthermore, diet is not the only factor influencing height. Ancient vikings most likely actually had a rather healthy diet and it's imaginable they were considerably healthier and in better physical condition than those they raided (i.e. overworked, underfed Saxon peasants). Vikings were considered large
for their time (they wouldn't count as especially big nowdays because the world population has gotten taller generally). Scandinavians however, are still tall even when compared to most other European peoples.
Nords aren't Scandinavians. Tamriel isn't Earth. I don't see why real-life height of vikings should affect TES lore.
