In 2009, I got the PS3, 120GB edition and I can say that I never had a problem playing Skyrim up to a Level 18 character. My filesize didn't get as large as some people though because I mostly play on PC.

But really, they all run the game the same. The difference pretty much lies in how much energy they consume (and thus how much heat they generate) and the size of the hard drive that comes with it, not in how games perform.
