Doesn't the xbox 360 support custom resolutions now?

You want to set it up for your native rez of 1440x900.

The game is only 720 on the consoles, you don't want to have the game up-rez your game more than it has to.

The xbox 360 supports up to 1080p as a screen resolution, but doesn't run games past 720p.

No. Only 720.

Too many threads about this in the past weeks... I don't understand why ...

I think it's just a miscommunicaiton here is all.

Resolutions can describe a number of things:

Native resolution - this is the max (native) resolution of your panel/TV.

Output resolution - this is the resolution your console/device is actually outputting to. You want this to be your native resolution, ro as close to it as possible.

Rendering resolution - this is the resolution at which the game engine renders, or displays the game. The console then upscales (by interpolating the image to cover the missing pixels) to match the output resolution.

Upscaling is bad, because it introduces noise and artifacts into the picture, and blurs the image. Also, obviously, it's making up the missing information, so it lacks the detail of an image with more pixels. So you want to minimize this as much as possible.
