This is a great topic. I'm pretty sure Bethesda will have spent a bit of time getting the work options right, so the question is if players use them or not.
Depends how hard it is to make money adventuring. After an OOO style mod comes out that makes it really hard... more than likely will grind away at the lumber mill or something. I'll definitely try out all the jobs at some point though.
I'll come home from my real life work and then I'll jump into Skyrim for a hard day of chopping down trees (Seriously, this sounds like so much fun to me). Which will probably be followed by a night at the tavern where I get into a brawl before I pass out in an alley behind said tavern. Rinse, repeat.
Then of course the occasional request for time off to go kill some dragons.
At the start of the game - yes. Not when I get on my feet firmly I plan to set my character up as an alchemist in a nice town before I start any adventures.
I might try some different jobs just to see what they're like, but my main profession will be as a loothound, sniffing out loot in the caves and dungeons and then selling it to the highest bidder.
And by "highest bidder" I mean "nearest pawn shop"
I much prefer the humble day to day activities in TES than with saving the world and what not. So yes I will definatly work. Skyrim will be my hermit simulator. Screw dragons and civil wars.. I want to cut wood and pick herbs.

Good idea "ooh that's a pretty flower" "Roaarrr" "Noooooooo" (Dragon lands with a loud shattering thud) "My pretty flower" :sadvaultboy:  :tes:
