There was a similar bug in Oblivion ( http://oblivion.nexusmods.com/mods/14471 ) but in Skyrim it's even worse...
When you're sitting on chairs and benches the game uses the wrong skeleton pose in 1st person: it uses the same skeleton when you stand-up. In 3rd person it's all right and the game uses the proper sitting skeleton pose.
Here are some sshoots to better understand a bug difficult to explain since a very few person noticed it:

In the 1st one you can see 1st person view when sitting on a Inn stool. Is wrong and is exactly the same when you're not sitting. Your sight should be much lowered. Notice also that the innkeeper and other actors will bow their heads if you switch from 1st to 3rd person when you're sitting on the stools because the 3rd person only uses the correct skeleton pose, causing them to lower their sight when switching point of view.

These other three pics demonstrate the wrong 1st person skeleton used while sitting on chairs and benches as you can see the torch from below (yes, eye-sight has been corrected but the game still uses the wrong skeleton stand-up pose so your arm with the torch is above your sight!). The demonstration comes also from the 3rd pic where you can see the right hand alongside your (standing up!) skeleton body which is of course wrong since you're supposed to be sitting at that moment.
The strange thing is that the game uses the correct pose and skeleton when in 3rd person. I wonder why Bethesda didn't use the same skeleton in 1st person and correct eye-sight height to fix these bugs....
I wonder if Bethesda will ever fix them in a 1.9 patch, finally...
