I only accept those which I find interesting. I keep most of them to finish later 'though, I just make sure I won't miss a quest because I didn't immediately accept it (due to possible bugs, and the habit of accepting quests immediately I got while playing Morrowind).

No, I have about 90 misc quests backlogged which I never intend to do. I do quests which suit my character and no more. Taking on every quest just 'cause is too videogamy for my liking. Immersing myself in a character is much more rewarding than some random enchanted item I get for fetching some NPC's amulet from a cave.

I do the ones that fit my character, and let the rest rot in my journal.

I generally accept them all, because that's the sort of guy I am...always willing to help someone out. I've got maybe ten general quests waiting for me and 15 or so miscellaneous ones. Lately I've just been doing quests for Jarls, in order to try and become a Thane...I like owning property! ;)

My character's the sweet, helpful type...so most of the time when someone asks for her help, they get it. Even if it's something totally inane like "go take this note to my sister across town."

So, yeah, I accept most of the misc. quests I find...the few I've turned down have been too dark for that particular character. This is how I wound up getting the "Hero of the People" achievement (for completing 50 misc. quest objectives) several months before getting the "Sideways" (complete 10 side quests) and MQ-related achievements. Sorry, can't stop the return of the dragons, I'm too busy helping everyone with random quests.

A downside of this is that I have to remember to take off the Amulet of Mara (I wear it mostly for the boost to restoration at the moment, being a mage) before going into town...otherwise you can't swing a dead skeever without hitting an NPC who wants to marry my character.

I have all my quests activated (except the nasty ones like the Deadra ones). My map is covered with markers so when I travel I just look to see what's near me and pop over there.

You can cancel dialogue when talking to an NPC. This helps to not accept the quest.

since my characters are mostly helpful, i do the most of them. some of them not, which are mostly the ones that require you to steal or something. i do not just break the law for everyone, if i do something good by breaking the law, than i even do that kind of quests. i don't play some holy priests, just like to play helpful characters.

My characters only accept quests that befit them. One of my pet peeves is quests that force their way into my log, and having no way to organize quests (e.g., by region) doesn't help. I like that there are so many available, though, as it adds more replay value.

I find that I tend to wander around a lot, having a strong dose of "hmm, what's over here?" flowing through my veins, so I frequently forget that I've got a job to do, a quest to get done, a riddle to solve, etc. Too busy just wandering. So, whether or not I accept a quest, however big or small, has no bearing on how I play. Once in a while I'll open the journal and think, "Oh, yeah, got those jobs to do," and go do some of them, then get distracted again.
