So I'm playing the DLC, and I am currently a vampire. I have Auriel's Bow and the Bloodcursed Arrows, but the sun is never visible and this is just a mess for me. Are there any enchantments, etc hat I can use to stop my stats from being stunted do to the sun?

Also, my female vampire seems to have a.. old-looking featutre to them, even at Stage one vampirism. (Vampire Lord). Their skin looks... odd. And it's not the save bug. Just... odd. Any help to this?

You can use the clear skies shout to get rid of any clouds or weather. You just have to aim the shout at the sky.
