Wow, this thread surprises me. I played Morrowind then Skyrim (both near their release dates) and I still haven't quite gotten over just how amazing the music is in Skyrim. Not just the themes, but how they're implemented. Other than the incredible main theme, my favourite piece of music is the solemn flute song (with the slow drum in the background) that you occasionally hear in shops and taverns. Something I often lament in modern games is the lack of actual melodies as opposed to ambient 'film score' backing music, and Skyrim slew those worries with its strong selection of pieces - play Morrowind now and you'll notice the utter lack of background noise (compared to Skyrim's layers of natural ambience) and plainly obvious repitition.
I've barely played Oblivion (bought it recently as I saw it cheap, but I'm not nearly done with Skyrim yet) and I found it to be in between. I heard something that is likely the main theme, and it was beautiful, but other than that there wasn't nearly as much as I heard and loved in my first hour or so of Skyrim. As I say, I haven't really scratched the surface so I can't properly judge yet, but I'd be shocked if it outdid Skyrim.
I really thought this would be the ONE area where everyone could be united in saying "Yes, Skyrim is brilliant". Still, at least nobody's said "the music was clearly dumbed down to cater to today's gamers; it was good for two and a half minutes but I can't even play the game anymore".
