Can mages mimmick the dragonborn's soul absorption?

AFAIK, as Dragonborn, you are the only one capable of truly killing a dragon, since you absorb its soul. Dragons killed by others can be raised again by the "Slen Tiid Vo" shout that Alduin used. I am not sure whether other dragons can use that shout, but it is a fact that you are the Last Dragonborn, as stated by the prophecy, and prophecies always come true in TES.

The key is advanced technology... or shall I say advanced magic in skyrim. If you're capable of absorbing a human soul and storing it inside of a soul gem why can't you do it with dragon? Farengar Secret-Fire from whiterun is a dedicated researcher of the dragons, and during the MQ he was able to gather up some scales and collect blood samples from Odahviing. I'm certain that in time he would discover (with the help of Sergius Turrianus and Phinis Gestor) and invent a spell that can trap a dragon soul and then after it's dead to absorb it into a soul gem. For none mages Sergius Turrianus could help Farengar with his research to find the knowledge to enchant weapons with this new skill to help town guards to officially kill dragons if present.

Since Alduin is not officially dead (His soul wasn't absorbed by the dragonborn) he can come back at anytime, even after the Dragonborn is long passed his mortal years.

Alduin was basically an Aedra - he was the first-born of Akatosh, the child of a Divine. That makes other dragons lesser Aedra. Ono the dragonborn can take the souls of the Aedra, and only lesser ones at that - I highly doubt that common mages will EVER be able to match that power. It would sort of defeat the purpose and 'amazingness' of the Dragonborn, wouldn't it?

The issue is that soulgems are keyed to specific souls. Normal gems capture the souls of Daedra, animals, undead, and any of the non-Empire (the 10 playable) races.

Black Soulgems allow one to capture to the souls of Empire races.

The issue is that a soul isn't destroyed when it's been captured... we think. During the process of use or encantment, it's *porbably* returned to Aetherius or Oblivion, with the power coming from the magical energy released when the soul passes through the veil. In this case, bigger souls make bigger "tears", and therefore more power can be captured.

We also need to consider size. It's possible that a dragon's soul is too big to be captured by a Grand/Black Soulgem, and so we'd need to somehow fuse several together to make a huge soulgem (like in Oblivion) to get it to properly capture it.

Anyway, using a soulgem after keying it to take the soul of a dragon is at best a temporary solution. As far as we know. The Dovahkiin is the only one who can actually absorb and incorporate a dragon's soul into their own, and therefore remove it from Alduin's method of resurrection.

Sounds like a nice simple mod idea.

Creating a script that transfers the dragon soul to a soul gem(I'd make a new soul gem though and call it "Dragon Soul Gem").

Is it even possible to soultrap Aedra? I have no idea, anyone?

Apart from that, I think dragons' souls are just too big. Maybe someone could make a soulgem powerful enough to contain a dragon, but it's still only a temporary solution - they'd have to store the gems somewhere, with no guarantee that nobody will ever try to use, destroy or release them.
Also it would probably be way too costly to create enough giant soulgems to trap all the dragons.

Dragonborn is the only viable solution, with his ability to permanently "disable" a dragon's soul.

You could soultrap Almalexia and Vivec, though whether they count as Aedra is anyone's guess.

Technically, they're Chimer, and more like Demigods than actual Aedra/Daedra. They only used the tools to make themsevles powerful immortals. Even Viviec (more-or-less) admits that they're not true gods.
