I've got a couple collars, not sure if they're needed. But I'm wondering if I can actually own my own Death Hound. IS this possible?

No it's not. Same on DG side with the huskies.

They die for good and you can't own them, just have them follow you.

They also die rather easily.

But I can have them follow me? That'll work I suppose. How do I do that? When I try to talk to them it doesn't give me any options.

It should give you them option... After joining either faction you are able to have them follow you by initiating conversation with them.

Well if thats true then I'm damn lucky then. We were attacked by alot of dawnguard at one point and he took alot of fire. Maybe they have an hp buff like the buyable dogs from Markarth.

And don't they look so cool? You look at his face and you see the sharp ferocious looking teeth, the desperate hunger for carnage in his eyes and his black fur just adds fear to this lil ol terror of midnight!
