i was up to my max on my weight but still had stuff to collect in a cave, so i found a dead body (human), went to inventory on him, off loaded all my stuff into him, then used the Dead Thrall spell on him, he then follows you on the rest of your journey and all the way home where you can kill him and get your stuff back he can die in battle but just use dead thrall on him again, even fast travelling home he will follow

In the Black Barrow quest, I found the dead Skeevers helpful for this task, as you can carry them while running rather than walking.
