You should go play Mass Effect 3 if you want a deeply satisfying and fulflfilling ending with hundreds of hours of replay value.
Right now I am actively trying to finish every single quest I have in my journal (except, obviously, the radiant quests) Then I plan on making a new character with the lessons I learned on my current one.
I have so much money and swag, I have one of my house carl's rooms slowly being filled with gold bars, another one dead bodies (lure a dead thrall in there, kill him, and position the body), every mamoth snout I have found since day 1. Each and every manequin, weapon stand, and display case has the best and most unique versions of everything on them.
My character is so freakishly rich and overpowered that I made myself king of everything I see because logically there is no reason for my dude to listen to anyone (Don't you speak to me in that tone Ulfric Stormcloak! After everything I did for you).
Mentioning anything about arrows in knees or stolen sweetrolls results in swift and immediate executions (Do I fetch the mead? Are you kidding me? ARRRRAAAGGGG WEREWOLF RAMPAGE).
If someone broke into any of my houses they would have access to the alchemical ingrediants to concoct any and all potions, an arsenal of top notch and unique gear that would equip an army, enough gold and ebony bars to build a castle's walls, and enough stolen property to put me in prison until Alduin's return.
This game is just such a time-sink that the simplest objective I have is forgotten about 12 seconds later when I wander off the road chasing butterflies or deciding that I want to see another horse leap off the top of the throat of the world.
Sometimes I like to pretend I am a serial killer, or a stalker, and just prey on innocent towns and villiages, or I go cross country with a theme (Emperor Palpatine: I can only equip dual shock while wearing black robes and all kills must be accompanied by an appropriate irl battle cry *UNLIMITED POOOOWWWAAAAAHHHH*).
I dunno, this game will offer you as much fun as your imagination can provide...
Though to be fair, after completing the final mission in the main story line I did take a nice long break from the game.
