In my game i enchanted a scimitar it has since depleted and i want to disenchant it but dont know how, i'm an XBOX 360 gamer.

Ok, you can't disenchant it because you already know the enchantment. You can only disenchant items you don't enchant (ie new enchantments). Go sell it. It will go for more money since it's enchanted.

Or just recharge it with a soul gem.

if you check your inventory you will usually find a soul gem that has a soul in it. Select the weapon in question and at the bottom left of the screen you will see recharge along with other choices. select recharge and then select the soul gem to use up. voila
