If you had a choice to help out in new war with humans, and the other races against monsters, with people that want to try to take over skyrim using monsters trolls, giants etc.. and you could have the choice to engage in large scale epic battles at all times? Like spending time uniting everyone and making new weapons, and upgrading them like making cavalry or on the other side helping them amass monsters to use in battle. And commanding whoever you choose becoming a general or commander. I think that would be a cool idea ,maybe adding gryphons.

No because all of that takes away from what Skyrim is and the philosophy of the Elder Scrolls series. If you want to come up with ideas for DLC that could be adopted by Bethesda (LOOOOOONG SHOT!!!), try things on a smaller scale that fit with the core gameplay and how everything else is set up. I personally don't bother thinking about the kind of DLC you're proposing because it's not how Bethesda operates, so it's a waste of my time to spend mental energy thinking about it.
