I'm always starting a new character when I don't like about my character, I've done this for about the thirtieth time, just trying to make the perfect character

Totally normal.

Bethesda tried to fix this by killing Classes and making all the Races kind of homogenized, but they failed.

Just bring the classes back plox.

I'm suffering from it but for a different reason. I just love making characters because all the races look so good now.

I'm not having this issue. I love my assassin. I spent nearly an hour trying to perfect every tiny little detail to my hearts desire. He's everything I want him to be. Evil and optimistic.

I do the exact same in every RPG in which I'm able to create my character. I just created a new character yesterday for Skyrim after spending days trying to figure out the right name for him only to want to create a whole new character again. I tried waiting for all the DLC to be released but failed... I'm now trying to wait again.

Not me. I'd much rather perfect one character, doing everything in Tamriel that I possibly can. To restart would be to do things over again, things that would be missing some of the excitement and wonder...
