Dragon bones and Dwemer scrap metal.....

Both of these weigh a lot, is there a use for them? Smelting, forging, etc?

You can make dragon equipments with one, and Dwemer equipments with the other. And yes, they involve smithing

Dragon Bones can be made in to armor, however, I don't think there is a use for the Dwemer scrap... not sure tho.

Yes, both can be used in smithing. Dragon bones you'll need for Dragon armor and Dwemer scrap metal can be smelted to Dwarven Metal Ingots which you then can use to forge Dwarven armor and weapons.

The big Dwemer items like struts, solid pieces and some small scrap plate metal can be smelted into Dwarven ingots for upgrading/smithing armor and weapons, generally the heavier Dwemer scrap can be smelted, leavers cogs and bowls can't. You need the smithing perks for Dwarven armour th create those items though, but you can smelt and sell the ingots or use them for upgrading gear.

There's 81 levels, don't be shy about using perks or you're stitching yourself right up.

After level 50 though levelling up becomes a lot harder, from what I've read getting to 81 requires 100 in all the skills. I do agree though on perks, decide which way you want to play and level those perks, I would consider enchanting and smithing essential with smithing though I would choose which type of armor your going to use and level that side first, light or heavy, then use perks in that tree to make your armor more effective, as you level smithing upgrade the armor and weapons. I use light armor one handed and destructive spells, these are the perks I concentrate on along with enchanting and smithing, the others can wait until I get those maxed.

I thought that you don't gain any more perks beyond 50th lvl.

There is at least one miscellaneous quest that involves collecting 10 of the cogs for someone at the College of Winterhold.

Absolutely incorrect; you continue gaining one perk per level as always.

Leveling does slow down noticeably past 50 but it's not too awful until you squeeze yourself down to the very last few skills that you never use / hate to use.

My major character is a 68 and I think he's only got six skills at 100.

Well, that's a kick to the balls arrow in the knee for me.
I was breaking my head with 49 perk builds and then it seems that we can have 80 of them. >_>

You should really know where to spend them by now, they would be your highest level skills.

http://www.ign.com/builds/the-elder-scrolls-5-skyrim/create should give you some idea of what you want from the trees and help you plan it out.

I would pick a couple major and couple minor, and spend points there till you get what you want out of the trees. You really shouldn't end up with may left over perks as you level.

-Bent Dwemer Scrap Metal

The Centurion Dynamo Cores found on the bodies of Dwarven Centurions are used to craft items at the http://www.uesp.net/wiki/Skyrim:Atronach_Forge.
The other Dwemer items (Dwemer Scrap Metal, Dwemer Gyros, Dwemer Levers, Small Dwemer Levers, as well as all dishes and cutlery) are just vendor trash.

Regarding Dwemer scrap metal: It's probably a minor bug, but plain "Dwemer scrap metal" cannot be smelted. "Bent Dwemer scrap metal" can be, though.

There's a lot of Dwemer junk you can't smelt, but I hoard it anyway.
