It's actually quite fun, just doing normal jobs, Minimum equipment, no fast travel.. Taking it easy and being a normal person for a change :D

.... and then a dragon flies in. Do you A. fight the dragon destroying your entire RP experience... or B. run and hide and never come out of your house again?

I tried playing a character that had no real prior combat experience and for RP reasons avoided any fight that looked or sounded(quest givers) hard. I ended up getting bored pretty quick and started over with a new character with some more experience.

What dragon? There are no dragons in my character's games. You never have to see one in this game if you do not want to. Never deliver the dragonstone of bleak falls barrow to Farengar, and you will never see a dragon. Simple as that. In fact, you can just ignore the rest of main quest leading up to that as well.

This. On two of my playthroughs I've completely ignored the MQ; one of which I've gained access to Whiterun, the other I've completely ignored it. Hell, on my second playthrough I even ignored the Helgen attack. I only played through it as a formality as it wasn't part of the story for that character

My dragonborn actually stopped adventuring in the main quest at the point he was asked to capture a live dragon to return to being a blacksmith for a few months. But finally he was forced to return to his destiny after a dragon attacked his forest village. He managed to kill the dragon without his armor or magical weapons and then walked back to Whiterun to the house he had kept there where he unlocked the chest containing all his old equipment and made his way to the hold to speak with the thane about capturing a dragon.

I have done something similar but role playing a hunter type character. I like how in Skyrim there is no animation for skinning the animal unlike in Red Dead, not from any squeamish standpoint it just gets a bit old after a while. I only wish the pelts are Worth a bit more gold. I make do making leather helms and enchanting them with water breathing.
