The videos you watched were probably pretty accurate on how to level smithing and enchanting. I'd say collect soul gems by any means (dwarven ruins are probably the best), get a weapon with a soul capture enchant or use the soul capture spell and fill them. Spam daggers to level smithing, enchant said daggers to level enchanting, sell said daggers to get more money and buy more gems and iron, rinse and repeat. My honest advice to you though is to not quick level smithing or enchanting. I did that with my first character, because I felt like I needed to for some reason. I actually became stressed out trying to figure out how to make my character as powerful as possible. The game became way too easy, and a full 10-15 levels on my character were a product of the quick leveling. By the time I was finished tuning my character to perfection, I was burnt out and realized I wasted my time.
I'm playing a character now that specifically avoids enchanting, and does very little smithing (no perks in smithing, just the occasional smithing potion) to slightly enhance the weapons she uses. It's the most fun I've had playing a character. Each to his own, I'm just letting you know about my own experience with a ridiculously buffed character.
