It seems that they are very long to refresh since I used all known to me available Ebony mines but they haven't refresh yet.
How long does it take ?

With iron mines its about 2 months of game time, so i guess would be the same with ebony

Ore veins take a month to refresh.

just check round bsmith vendors for more ore and bars in the meantime burn away that month via fast travel to all the cities.

Pretty sure it's 30 in-game days for each vein.

Because they take 30 days in game to refresh, I try to hit the ebony mine at the orc stronghold to the southeast of Windhelm as early as possible in the game. There isn't any fighting to be done, and it should be close to refreshed by the time you're ready to smith ebony/daedric.

According to UESP, "30 days if the mine is tagged as "cleared"; 10 days otherwise". http://uesp.net/wiki/Skyrim:Mining
