Select the weapon you wish to recharge in your inventory, then use the button T (on PC) to bring up a list of filled soul gems to use for recharging the weapon.
I do not play console, but on a PC I can click on the journal, then select the rightmost column and bring up a help topic that will answer these type of questions for future reference, as long as it involves general gameplay.
Click on Jounal, then click on System. This brings up access to the Help section.

Sould gem's recharge your enchanted weapon's. I use the smallest, that can be used first. Petty's usually, except on weapons that they barely charge. I almost never use grand or greater to re-charge, as they are better from making enchanted Item's.

Open your inventory (however you do that on PS3) and go to the item you want to recharge, and press "RB" (right bumper). A small menu will open where the description ordinarily is, and you can choose a soul gem to use. Use the lower value ones not the greater or grand ones. You can do this multiple times to charge up a weapon to full. Uses up the filled soul gem in the process.

I believe it's R2 for PS3. If you scroll to the weapon in question while it's in your inventory (doesn't need to be equipped) you'll see the option at the bottom of the screen. After you depress R2, like bradleyh said, you'll see a list of soul gems from which to choose.

L2 is sprint on the PS3 IIRC. I play on the PS3. For the enchanted weapon, go to the weapon in the inventory and then hit R2. That'll bring up a box where you can select which type of gem you'd like to use to recharge. Like Ingold, I use the greater and grand gems to enchant items. All the others get used for recharging weapons and staffs.

People have basically answered your questions, but:

L2 to Sprint
R2 to Recharge

I was sprinting when I took the screenshot - that's why it's so crappy. No, it was taken with a cell phone. :(
