Free Lance Exploration

I have a quick question, I've started using fast travel less and less and am actually riding my horse from point A to point B. During this time I have come across all kinds of interesting dungeons and cabins and general spots where there are monsters to be killed and stuff to be done.

I'm afraid that if I just strike out as a freelance adventurer into the wild blue yonder then it will glitch quests if I pick them up later on. I am playing on PC and I know how to use the console to work with quests but it's a hassle to look up all the correct reference codes to advance a quest if it gets bugged. This concerns me though because I have picked up quests after already completing the objective and then I can't complete it and it annoyingly stays in my log as a quest that needs doing. Some quests have seemed to righted themselves, if I've already done a quest and then happen to get it later from someone the game will register it as complete but I haven't paid attention enough to it to see if there is any consistency.

An example is Azura's shrine. I achieved Azura's star some time ago, when I was out riding I came across a dark elf on a pilgrimage to Azura's shrine. I talk to him and he tells me he is on his way to the shrine, there was one dialogue option along the lines of "Where is the shrine of Azura?" or "who is Azura?" or something like that. So then he marks it on my map and I get a misc. quest in my log to go visit Azura's shrine. So I head over there to see if I can get the quest done and out of my log, the target for this little Misc quest was Aranea, the lady usually hanging around the shrine. However when I spoke to her there was no new dialogue option or anything and since I had already visited the shrine and did all the quests for it, there wasn't any way for me to complete this objective. I used the console to advance the quest stage for it and that fixed it but yeah I just want to know if the game is prone to more screwing up if I just go out and do whatever, not following any quests.

It does have a tendency to do such... That's why I'm working on one questline at a time and I find that if I do that it doesn't screw up as much...
