Help editing smithing menu : V

Should be pretty simple. I need to know how to make a new material (e.g. Iron, Steel, Orcish) on the smithing menu.
I read pre-CK tutorials where I would have had to change a bunch of ID keywords and such but I can't make heads or tails of them.
